When I was a kid in Little Rock, I used to LOVE going to Wyatt’s Cafeteria and Franke’s Cafeteria and ordering the fried zucchini with spicy dill sauce. Would I eat it fried now? Probably not. But in addition to tasting good, squash and zucchini have a myriad of health benefits.
For example, consuming raw or grilled squash and zucchini increases your intake of dietary fiber, facilitates cell growth and aids in tissue maintenance. It also is an excellent source of potassium, a heart friendly electrolyte and helps bring the reduction in blood pressure and heart rates by countering pressure effects of sodium.
